Hello Halle,
What exactly is happening during PocketSphinx’s calibration phase? Is the engine measuring ambient noise or is it expecting a sample of the user’s voice?

It’s measuring ambient noise (very specifically it is finding what constitutes “silence”).
Does calibration work against a very noisy environment such as being in a cafeteria? Or just minor noise levels such as being in a coffee shop?
It depends a bit on the vocabulary in use. It’s necessary to test under different noise levels in order to establish how it affects specific apps.
